Fruitcake Cookies

- 1 cup chopped green and red cherries glacé (candied cherries) shopping list
- 1/2 cup mixed candied peel shopping list
- 1/2 cup sultana raisins shopping list
- 1 cup flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/2 cup butter or margarine shopping list
- 1/2 cup brown sugar shopping list
- 1 egg shopping list
- 1 tsp vanilla shopping list
- 1 tsp almond extract (optional - but gives a great flavour) shopping list
How to make it
- Preheat oven to 325ºF
- Combine cherries, mixed peel and raisins in small bowl. Set aside.
- In another bowl, combine flour, baking powder and salt.
- In medium bowl, cream butter and sugar.
- Beat in egg, vanilla and almond extracts
- Stir in flour mixture until blended
- Stir in fruit mixture -- it will seem as tho' there isn't enough flour to cover everything, but there is!
- Drop by rounded teaspoon on cookie sheets lined with parchment paper
- Bake for 12-15 minutes until edges are golden brown.
