How to make it

  • Preheat oven to 325ºF
  • Combine cherries, mixed peel and raisins in small bowl. Set aside.
  • In another bowl, combine flour, baking powder and salt.
  • In medium bowl, cream butter and sugar.
  • Beat in egg, vanilla and almond extracts
  • Stir in flour mixture until blended
  • Stir in fruit mixture -- it will seem as tho' there isn't enough flour to cover everything, but there is!
  • Drop by rounded teaspoon on cookie sheets lined with parchment paper
  • Bake for 12-15 minutes until edges are golden brown.
