Ingredients
  • 1 cup chopped green and red cherries glacé (candied cherries)
  • 1/2 cup mixed candied peel
  • 1/2 cup sultana raisins
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter or margarine
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp almond extract (optional - but gives a great flavour)

Directions
  1. Preheat oven to 325ºF
  2. Combine cherries, mixed peel and raisins in small bowl. Set aside.
  3. In another bowl, combine flour, baking powder and salt.
  4. In medium bowl, cream butter and sugar.
  5. Beat in egg, vanilla and almond extracts
  6. Stir in flour mixture until blended
  7. Stir in fruit mixture -- it will seem as tho' there isn't enough flour to cover everything, but there is!
  8. Drop by rounded teaspoon on cookie sheets lined with parchment paper
  9. Bake for 12-15 minutes until edges are golden brown.
