Gluten-free Vegan Collard Greens Recipe
Tons of recipes for southern-style collard greens involve ham or bacon. This one doesn't! and it's delicious. I think these taste better the next day!

Ingredients
  • 1 bunch collard greens (~10 leaves?), chopped
  • 1/4 onion, diced
  • 3 cloves garlic, diced
  • 1 tomato, diced
  • 1 T olive oil
  • 1/2 cup water or vegetable stock
  • 1/4 cup apple cider vinegar (maybe less)
  • 1/2 tsp red pepper flakes (or to taste)
  • salt to taste

Directions
  1. Fry onions and garlic in olive oil for about 2 minutes.
  2. Add diced tomato, collard greens, water (or stock), vinegar, and red pepper flakes
  3. Cook as long as you want -- an hour or two -- over low heat until greens are tender.

I added this to the gluten free group!


I'm confused. Why would collard greens have gluten in them to begin with? Even if seasoned with ham they would still be gluten-free wouldn't they? I'm a baker and gluten is a protein present in wheat flour and gives structure and strength to baked goods. Or, so I thought.
