How to make it

  • Fry onions and garlic in olive oil for about 2 minutes.
  • Add diced tomato, collard greens, water (or stock), vinegar, and red pepper flakes
  • Cook as long as you want -- an hour or two -- over low heat until greens are tender.

    I'm confused. Why would collard greens have gluten in them to begin with? Even if seasoned with ham they would still be gluten-free wouldn't they? I'm a baker and gluten is a protein present in wheat flour and gives structure and strength to baked goods. Or, so I thought.
