Spicy Celery Dry Curry

- 1 lb celery, washed & chopped shopping list
- 1 medium red onion shopping list
- 1 tsp minced garlic shopping list
- 1/4 tsp grated ginger shopping list
- 3 tbl.sp olive oil shopping list
- 1/4 tsp. cumin seeds shopping list
- 1 Bay leaf- Discard before serving shopping list
- 1 cinnamon stick-Discard before serving shopping list
- a pinch of Tumeric shopping list
- 1/4 tsp. coriander powder shopping list
- 1/4 tsp cayenne pepper shopping list
- 1/2 cup Chopped cilantro shopping list
- 2 Tomatoes- chopped shopping list
- salt to taste shopping list
- a pinch of sugar shopping list
How to make it
- 1. Heat a non-stick pan, add oil, then add cumin seeds, bay leaf & cinnamon.
- 2. Wait until the cumin starts to change color, then add ginger, garlic and saute for a min.
- 3. Then add the chopped onions, Tumeric and salt, saute until it starts to change color.
- 4. Then add the chopped celery and add salt. Saute until it starts to become soft then add the coriander and cayenne pepper powder and saute until the raw smell goes off.
- 5. Then add the chopped cilantro, saute for a second and then add the chopped tomatoes and a pinch of sugar.
- 6. Cook until the tomatoes combines with all the vegetables and the excess liquid burns off.
- 7. Check for seasonings and serve.
- 7. Serve hot with rice or Naan or Tortillas.
- NOTE:
- 1) The key thing to better cooking is adding seasoning like salt as you go from one step to another rather than all at once.
- 2) Old school may say never to taste your food before serving but I say, if you are serving it to somebody else you better make sure everything is right rather than saying I am so sorry, its too salty or I forgot to put salt. It saves everybody from embarrassment. Don't you think!!
