How to make it

  • Mix all ingredients together in order then shape into cake and sauté in hot canola oil until golden on both sides.
  • Bake at 400 for 5 minutes.

    Great dish but being one to always "doctor" it have a few suggestions. Use "pink" scallops as they are sweeter. Use panko for the breading. Had trouble with this sticking together but added a bit more Panko along with smigin of grated jack and sharp chedar. Add bit of chopped yellow bell pepper. Baking @ 400 was what finished it perfefctuly. This was outrageously delicious!
