Alaska Salmon Chowder Recipe
This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Garrett Estate in Fort Worth, Texas in 1994.

Ingredients
  • 7-1/2 ounce can salmon
  • 1/2 cup chopped white onions
  • 1/2 cup chopped celery
  • 1 garlic clove minced
  • 2 tablespoons margarine
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 2 cups chicken broth
  • 1/2 teaspoon thyme
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup chopped broccoli
  • 1 can evaporated milk
  • 10 ounces frozen corn kernels thawed
  • Minced fresh parsley

Directions
  1. Drain and flake salmon reserving liquid.
  2. Saute onions, celery and garlic in margarine.
  3. Add potatoes, carrots, reserved salmon liquid, chicken broth and seasonings.
  4. Simmer covered for 20 minutes.
  5. Add broccoli and cook 5 minutes.
  6. Add flaked salmon, evaporated milk and corn then heat thoroughly.
  7. Sprinkle with minced parsley to serve.
