White Wine Cream Sauce Mostaccioli with veggies

- 12ozs of Mostaccioli noodles (about 3/4 a box) shopping list
- 1 tablespoon olive oil shopping list
- 1 tablespoon butter shopping list
- 1 red onion chopped shopping list
- 4 garlic cloves pressed shopping list
- 1 1/2 cups white cooking wine shopping list
- 3/4 heavy cream shopping list
- fresh spinach (about half a bag) shopping list
- 4 roma tomatoes chopped (not to small) shopping list
- 1 package fresh mushrooms sliced shopping list
- basil and salt to taste shopping list
- Italian cheese to top (parmesan, romano, asiago combo is excellent otherwise one will work...buy the more expensive harder shredded cheese that comes in the containers) shopping list
How to make it
- Melt butter in sauce pan and add garlic and red onion until translucent
- Stir in 1 cup white wine and bring to a boil
- Once boiling add 1/2 cup white wine
- Boil for 10 minutes
- Boil Mostaccioli noodles during this time in a different pot
- Reduce heat for the sauce and when no longer boiling slowly stir in cream and simmer for 3-5 minutes add a little salt and basil if you like
- During the last 5 minutes of the sauce and noodles cooking time start cooking Spinach, mushrooms, and tomatoes with garlic and olive oil for 5 minutes in a separate pan
- Mix the sauce and vegetables together
- Drain noodles
- Serve in a deep pasta bowl (if available) and put in a little bit noodles-then sauce-then cheese and do once more so that there are two layers of all three.
