This is quick and easy.... Light dessert....and so pretty to look at... Ive made it a couple times and hubby just loves it....another Light and Tasty recipe

Ingredients
  • 1 package sugar free lime gelatin (.3 ounce)
  • 1 cup boiling water
  • 1 prepared angel food cake, cut into 1 inch cubes
  • 1 package reduced fat cream cheese cubed
  • 1/2 cup sugar
  • 2 teaspoons lemon juice
  • 1 1/2 teaspoons lemon zest
  • 1 carton reduced fat whipped topping, thawed, divided (8 ounces)

Directions
  1. In a bowl, dissolve gelatin in boiling water,
  2. Refrigerate until mixture just begins to thickens, about 35 minutes.
  3. Place cake cubes in a 13 x 9 x 2 inch dish coated with nonstick cooking spray; set aside.
  4. In a small mixing bowl, beat cream cheese until smooth.
  5. Beat in sugar, lemon juice and zest.
  6. Add gelatin mixture; beat until combined.
  7. Fold in 1 1/2 cups whipped topping.
  8. Spread over cake, covering completely.
  9. Refrigerate for at least 2 hours or until firm.
  10. Cut into squares; top with remaining whipped topping.
