Pepper Jack Muffins

- 1 tbsp oil shopping list
- 1/2 cup finely chopped sweet red pepper shopping list
- 1/4 cup finely chopped onion shopping list
- 2 tbsp finely chopped, seeded, jalapeno pepper shopping list
- 1 1/4 cup flour shopping list
- 1 cup cornmeal shopping list
- 3 tbsp packed brown sugar shopping list
- 2 1/2 tsp baking powder shopping list
- 1 tsp black pepper shopping list
- 1/4 cup shortenin shopping list
- 1 1/4 cup milk shopping list
- 1 egg shopping list
- 1 cup shredded cheese (I use Monterey Jack) shopping list
How to make it
- heat oven to 400 degrees. grease muffin tins
- heal oil in small skillet, add red pepper, onion and jalapeno. cook until vegetables are tender-about 8 minutes.
- combine flour, meal, sugar, powder, pepper in bowl. with pastry blender cut in shortening until mixture resembles coarse crumbs.
- beat milk and egg in small bowl until blended
- stir milk mixture, begetables and cheese into flour mixture until blended.
- spoon into muffin pan
- bake for 15-20 minutes or until wooden toothpick comes back clean
