Maine Potato Candy

This is an old favorite of my family's. It is a wonderful tasting and easy to make holiday treat. Great for gift giving!
Ingredients
- 1 stick of softened magarine shopping list
- 3/4 cup of hot mashed potato shopping list
- 1/2 tsp. salt shopping list
- 1-8 oz. package of coconut shopping list
- 2 lbs. powdered sugar shopping list
- 1 tsp. vanilla shopping list
- 1 large package of chocolate chips shopping list
- 2 Tbs. shortening shopping list
How to make it
- Mix first 6 ingedients well. (mixes well with electric mixer)
- Pat into buttered 9x13 pan or cookie sheet
- Chill over night
- Cut into small squares
- Melt chips and shortening together over hot water
- Dip squares of coconut mixture into the chocolate mixture
- Place on waxed paper to harden. Store in frig or freeze.
