This is an old favorite of my family's. It is a wonderful tasting and easy to make holiday treat. Great for gift giving!

Ingredients
  • 1 stick of softened magarine
  • 3/4 cup of hot mashed potato
  • 1/2 tsp. salt
  • 1-8 oz. package of coconut
  • 2 lbs. powdered sugar
  • 1 tsp. vanilla
  • 1 large package of chocolate chips
  • 2 Tbs. shortening

Directions
  1. Mix first 6 ingedients well. (mixes well with electric mixer)
  2. Pat into buttered 9x13 pan or cookie sheet
  3. Chill over night
  4. Cut into small squares
  5. Melt chips and shortening together over hot water
  6. Dip squares of coconut mixture into the chocolate mixture
  7. Place on waxed paper to harden. Store in frig or freeze.

I've heard of this, but never seen a recipe for it before. Interesting.


Was born in Maine and lived there for 18 yrs and never have had this. Will have to make it and share with all these "southern" rednecks lol.


Wow! haven't had these in a long while. I've lived in Mid-coast Maine all my life. We call them Needhams. We used to get boxes of irregulars @ Reny's (a Maine discount chain) when I was a kid but I can't remember the companies name that made them. (I really should check to see if they still have them)My grandmother used to make these & peanut butter balls for christmas too.
