How to make it

  • In a large mixer bowl, beat the egg whites well
  • Add salt, beat until peaks form
  • Gradually add sugar, beat until glossy
  • Stir coconut, vanilla and almond extracts into egg whites
  • Drop by mounded tablespoonfuls about 2 inches apart onto a lightly greased cookie sheet or sheets
  • Bake at 325 degrees for 20 minutes
  • Cool on cookie sheet for about 5 minutes
  • Remove from cookie sheet with a metal spatula
  • Place on a wire rack to cool
  • GREAT FOR CHRISTMAS
