  • 1 portion of chinese long life noodles
  • scallion, finely sliced
  • 1 pig's knuckle
  • 4 tbs of soy sauce
  • 2 tbs sugar
  • 4 cloves garlic
  • 1 chilli
  • 1 leeks, cut into 5 cm lenght
  • a little bit clove and cinnamon
  • 6 cups of water
  • salt and pepper

Directions
  1. caramelize sugar with 2 tbs of water and soy sauce, clove and cinnamon add pig's knuckle coat well
  2. add water, garlic, chilli, leek, cook for about 40 mins with medium heat until tender
  3. cook noodles in boiling water, add 1/2 cup cold noodles, when it boils again add another 1/2 cup of water, when it boils again drain
  4. mix noodles with the sauce from pig's knuckle
  5. put knuckle on top and sprinkle scallion on top

pig's knuckle that is used in this recipe are fresh (ham hock)pork's leg, not only the front, we can also use the back leg :)
