Sweet Potato And Black Bean Burritos Recipe
The combination of sweet potatoes and spicy black beans are really wonderful.

Ingredients
  • 2 sweet potatoes
  • 2 oz chedder cheese
  • tortillas (whole wheat, or regular)
  • Salsa (optional)
  • Sour Cream (optional)
  • Bean Mixture:
  • 1 tbsp olive oil
  • 1/2 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed (I use Low Sodium)
  • 1 cup water
  • 1 1/2 tbsp chili powder
  • 1 tsp cumin
  • 2 tsp dijon mustard (or any prepared mustard)
  • 1 1/2 tbsp soy sauce
  • 1 tbsp Chipotle Tabasco Sauce (or powder, or from a can)
  • Cayenne pepper (if you REALLY want it spicy)

Directions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Roast whole sweet potatoes until very soft, about 45 minutes.
  3. Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans and water, and heat until warm. Stir in the chili powder, cumin, mustard, soy sauce, Tabasco and cayenne pepper (if using). Let this bubble away while you get the sweet potatoes ready.
  4. When potatoes are soft and cooled, Peel them, place in a bowl and mash until no big chunks remain.
  5. Divide bean mixture and mashed sweet potatoes evenly between the tortillas. Roll the tortillas up and place them on a greased baking sheet.
  6. Top with cheese. Bake for 15 minutes in oven, and serve, topped with salsa and/or sour cream.

This sounds so good - I can't wait to try!


This is great for vegetarians and for vegans who can sub the cheese & sour cream or just leave them out. I LOVE SWEET POTATOES...going to have to submit a fried 3 potatoe dish that is out of this world.


This was really good. At first I wasn't happy with the black bean mixture by itself, but once it was mixed with the sweet potatos it was excellent. Great combination Thanks.

Alterations


Bestlife has new wraps (Light Flat Out) that would be perfect for this. Their Sun Dried Tomato has 9g of protein, 9g of fiber and only 90 calories each. Low in Carbs (17) and they taste great. They have different flavors, whole grain, spinach and a couple more but they are lower in protein & fiber (2 or 3 g's).
