How to make it

  • Preheat oven to 350 degrees F (175 degrees C).
  • Roast whole sweet potatoes until very soft, about 45 minutes.
  • Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans and water, and heat until warm. Stir in the chili powder, cumin, mustard, soy sauce, Tabasco and cayenne pepper (if using). Let this bubble away while you get the sweet potatoes ready.
  • When potatoes are soft and cooled, Peel them, place in a bowl and mash until no big chunks remain.
  • Divide bean mixture and mashed sweet potatoes evenly between the tortillas. Roll the tortillas up and place them on a greased baking sheet.
  • Top with cheese. Bake for 15 minutes in oven, and serve, topped with salsa and/or sour cream.

    This was really good. At first I wasn't happy with the black bean mixture by itself, but once it was mixed with the sweet potatos it was excellent. Great combination Thanks.

    This is great for vegetarians and for vegans who can sub the cheese & sour cream or just leave them out. I LOVE SWEET POTATOES...going to have to submit a fried 3 potatoe dish that is out of this world.
