Leftover Veggies  Pesto Recipe
Needed to go shopping, but needed to eat first. Made out of random leftovers and freezered items, and turned out decently. All quantities are very approximate - might need a little more veggie sausage and pesto.

Ingredients
  • Pasta - 2 cups dry (leftover from experimental home pasta-making)
  • Veggie sausage - 6 Morningstar Farms frozen links
  • Frozen green beans - 1.5 cups (was looking for frozen kale; found beans first)
  • Frozen artichoke hearts - 1 cup
  • Pesto - 5 ice cubes worth (note: homemade pesto can be frozen in ice cube trays; 1-2 cubes = 1 serving!)

Directions
  1. Start boiling water
  2. Look in freezer for frozen veggies/sausage
  3. Prepare veggie sausage according to directions (skillet)
  4. Put pasta in boiling water
  5. Steam frozen veggies
  6. Heat pesto in microwave on "defrost" setting (2-3 minutes, stirring once - full power will burn)
  7. Mix all ingredients in bowl
  8. Serve

Oh now this is very cool! Never thought to freeze my pesto ^_^...great idea!


Yep, it's pretty convenient - you can make an enormous batch of pesto when basil is in season and plentiful, freeze it up, and use it the rest of the year!


I love the pesto in ice cube trays idea! I always make pesto in the summer when my basil is thriving and WISH I had some in the winter! Great idea ~ high five for that idea alone. Blessings, deb
