These are a great, fibre-full and delicious snack for anyone on the go. A good source of protein and nutrients with a great nutty flavour from the toasted buckwheat.

Ingredients
  • 1 cup toasted buckwheat groats (kasha)
  • 1 cup mixed raisins and chopped dates
  • 4 cups grape juice
  • ¼ teaspoon salt
  • ½ cup soybean flour
  • ½ cup brown rice flour
  • ½ cup whole-wheat pastry flour
  • 1 cup rolled oats

Directions
  1. Preheat oven to 350F. Lightly grease cookie sheets.
  2. Bring the buckwheat groats, dried fruit and juice to a boil.
  3. Add salt reduce the heat and cover the pan.
  4. Simmer for 15 minutes. Uncover and let cool for 15 minutes.
  5. Combine all the ingredients except the oat flakes in a.
  6. Form the dough into small balls. (Tip: it helps to dip your fingers in cold water)
  7. Roll the balls in the oats.
  8. Place the balls 1 inch apart on the prepared cookie sheet.
  9. Press down with the moistened tines of a fork.
  10. Bake for 15 minutes.
