Salmon Chowder Recipe
A nice fish chowder goes with everything and anything. Make a main dish meal for 2 or side appetizers for 3 to 4

Ingredients
  • 7 3/4 oz. salmon, cooked
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1 clove garlic, minced
  • 2 t. butter
  • 2 c. chicken broth
  • 1 t. salt
  • 1/2 t. thyme
  • 1/4 t. pepper
  • 1 c. diced potatoes, cooked
  • 1 c. diced carrots, cooked
  • 1/2 c. chopped broccoli, cooked
  • 13 oz. half and half
  • minced parsley

Directions
  1. Saute onion, celery and garlic in 2 t. butter,
  2. In small frying pan, cook salmon for 4 minutes on each side in butter
  3. cook potatoes, carrots, broccoli and add to onion mixture, along with chicken broth and half and half.
  4. Add seasonings
  5. Heat until very hot but do not allow to boil.
  6. Add salmon pieces
  7. sprinkle top with parsley
  8. Let stand until salmon is warmed through
