Tempt Me Green Tomato Pie

- 6 medium green tomatoes shopping list
- 1 cup sugar shopping list
- 3 tablespoons flour shopping list
- 1-1/4 teaspoon cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/8 teaspoon ground cloves shopping list
- 1-1/2 teaspoons lemon zest shopping list
- 1/2 teaspoon salt shopping list
- 2 tablespoons unsalted butter shopping list
- Homemade pastry for a 2 crust pie shopping list
How to make it
- Preheat oven to 400.
- Blanch tomatoes in boiling water for 20 seconds.
- Remove from water then core and peel.
- Cut tomatoes into 1/4" slices.
- In large saucepan combine tomatoes with 1/4 cup water.
- Bring to a boil then cover and reduce heat and simmer 5 minutes.
- Remove tomatoes from liquid with a slotted spoon reserving boiling liquid.
- Combine flour, sugar, salt, cinnamon, nutmeg, cloves and lemon zest.
- Add flour mixture to liquid.
- Cook stirring constantly just until boiling.
- Remove from heat and stir in butter until melted.
- Gently stir in prepared green tomato slices.
- Cool slightly for 15 minutes and spoon into unbaked pie crust.
- Top with top pastry crust then crimp and seal edges.
- Cut slits in tops and sprinkle lightly with sugar and bake for 40 minutes.
