Vanilla Wafer Crusted Sweet Potato Pie Recipe

How to make it

  • Boil potatoes until tender then allow to cool and peel.
  • Put potatoes in a large mixing bowl and mix thoroughly with a potato masher.
  • Melt butter and mix with remaining ingredients except vanilla wafers.
  • Arrange vanilla wafers in bottom and up sides of pie plate.
  • Pour potato mixture over cookies then bake at 375 for 40 minutes.
