Curried Shrimp Artichoke and Rice Salad

- 1 package chicken rice-a-roni, cooked and cooled shopping list
- 2 green onions, chopped shopping list
- 1/4 cup green pepper, chopped shopping list
- 6 oz. jar marinated artichoke hearts, drained saving 1/4 cup juice, and chopped shopping list
- black olives, sliced or chopped shopping list
- small can of mushrooms, drained shopping list
- 1/2 pound shrimp, cooked, cooled and chunked shopping list
- 1/4 tsp curry powder shopping list
- 1/3 cup mayonnaise shopping list
- reserved 1/4 cup of artichoke juice shopping list
How to make it
- Prepare rice-a-roni according to package directions;
- Boil or steam shrimp;
- Add onions, green peppers, artichokes, olives, and mushrooms to cooled rice-a-roni;
- Fold in chunked shrimp;
- Add mayo, curry powder and reserved juice, and blend well;
- Chill before serving.
