Black Bean And Avocado Salad Recipe
Very yummy!! I am always trying to find new ways to serve beans and I came across this one while serfing the web :)

Ingredients
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (11 ounces) Mexicorn, drained
  • 1-1/4 cups chopped peeled avocados
  • 1 cup chopped seeded cucumber
  • 1 cup chopped seeded tomatoes
  • 1/2 cup chopped sliced green onions
  • 1 little jalapeno pepper, seeded and chopped ( optional, I do not use it)
  • 1 teaspoon of lime juice
  • THE DRESSING:
  • 2 tablespoons cider vinegar
  • 1 tablespoon olive oil ( some good stuff)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste

Directions
  1. In a large bowl, combine the first eight ingredients.
  2. In another small bowl, whisk all the dressing ingredients. Pour over salad and mix gently
  3. Cover and refrigerate for at least 1-2 hour before serving
