Black Bean And Avocado Salad

- 1 can (15 ounces) black beans, drained and rinsed shopping list
- 1 can (11 ounces) mexicorn, drained shopping list
- 1-1/4 cups chopped peeled avocados shopping list
- 1 cup chopped seeded cucumber shopping list
- 1 cup chopped seeded tomatoes shopping list
- 1/2 cup chopped sliced green onions shopping list
- 1 little jalapeno pepper, seeded and chopped ( optional, I do not use it) shopping list
- 1 teaspoon of lime juice shopping list
- THE DRESSING: shopping list
- 2 tablespoons cider vinegar shopping list
- 1 tablespoon olive oil ( some good stuff) shopping list
- 1 teaspoon ground cumin shopping list
- 1/2 teaspoon dried oregano shopping list
- salt and pepper to taste shopping list
How to make it
- In a large bowl, combine the first eight ingredients.
- In another small bowl, whisk all the dressing ingredients. Pour over salad and mix gently
- Cover and refrigerate for at least 1-2 hour before serving
