Ingredients
  • 2 Lbs. Beef Stew Meat (or Chuck Roast)
  • 2 Tbsp. Salad Oil
  • 1/2 Cup Chopped Onion
  • 1 14.5 oz. Can Stewed Tomatoes
  • 1 4 oz. Can Chopped Green Chilis
  • 2 tsp. Chili Powder
  • 1 tsp. Ground Cumin
  • to taste Salt
  • to taste Black Pepper

Directions
  1. - Brown meat in oil in Dutch Oven.
  2. - Add onion, sauté until onion is soft.
  3. - Add Remaining ingredients.
  4. - Cook, covered, over low heat, for AT LEAST 2 hours, stirring occasionally.
  5. - Remove cover and simmer 30 minutes, or until mixture is thickened. (You may need to add some cornstarch/water mixture to thicken further).
  6. ALTERNATE COOKING METHOD:
  7. - Cook all day in slow-cooker on "low".
  8. - Turn to "high" and remove cover for last 30 minutes. (Still may need to thicken, though).
  9. ********* Serving suggestions : **********
  10. - just as a thick stew,
  11. - as a "sopa" on top of "fideos",
  12. - with flour tortillas as tacos.
