How to make it

  • Cut cucumbers in half lengthwise, then slice into paper-thin half-moons (a mandoline slicer will help here if you have one).
  • In a small bowl, whisk together the vinegar, Splenda, salt and ginger. Add the cucumber slices and toss so cucumbers are coated with the dressing.
  • Refrigerate minimum 1 hour before serving.

    I use a Japanese pickle press for my sunomono. They are inexpensive about $30 for a 3.3 L. Using the press makes the pickles crispier. It is a salt process and the sweetener and ginger should be added after the pickles are made. If you put ginger in the press the salt will take out the heat of the ginger. I guess that is o.k. for some. You can use regular cucumber but I peel mine and remove the core.

    An English cucumber is long and thin, usually wrapped in plastic in the stores and doesnt need peeling.
