How to make it

  • Beat sour cream, eggs, oil and salt together.
  • Mix in flour adding more if necessary until soft ball forms.
  • Divide dough in half.
  • On a floured board roll each half of the dough into a think sheet.
  • Cut circles in the dough with a cutter 4" in diameter.
  • Cheese Filling:
  • 2 egg yolks
  • 1 tablespoon butter
  • 1 pound farmers cheese mashed
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar.
  • Cream yolks and butter then mix in cheese, salt and sugar.
  • Put 1 teaspoon of filling on each dough circle being careful to place if off center.
  • Moisten rim of the circle with water.
  • Fold unfilled side of the circle over filling and press edges of crescent firmly to seal.
  • Drop pierogi into boiling salted water and cook gently for 5 minutes.
  • Remove with perforated spoon then serve with melted butter and sautéed onions.
