Cheese Filled Pierogis

- 1 cup sour cream shopping list
- 2 eggs shopping list
- 1 tablespoon vegetable oil shopping list
- 1 teaspoon salt shopping list
- 2-1/2 cups flour shopping list
How to make it
- Beat sour cream, eggs, oil and salt together.
- Mix in flour adding more if necessary until soft ball forms.
- Divide dough in half.
- On a floured board roll each half of the dough into a think sheet.
- Cut circles in the dough with a cutter 4" in diameter.
- Cheese Filling:
- 2 egg yolks
- 1 tablespoon butter
- 1 pound farmers cheese mashed
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar.
- Cream yolks and butter then mix in cheese, salt and sugar.
- Put 1 teaspoon of filling on each dough circle being careful to place if off center.
- Moisten rim of the circle with water.
- Fold unfilled side of the circle over filling and press edges of crescent firmly to seal.
- Drop pierogi into boiling salted water and cook gently for 5 minutes.
- Remove with perforated spoon then serve with melted butter and sautéed onions.
