Cheese Filled Pierogis Recipe

Ingredients
  • 1 cup sour cream
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 2-1/2 cups flour

Directions
  1. Beat sour cream, eggs, oil and salt together.
  2. Mix in flour adding more if necessary until soft ball forms.
  3. Divide dough in half.
  4. On a floured board roll each half of the dough into a think sheet.
  5. Cut circles in the dough with a cutter 4" in diameter.
  6. Cheese Filling:
  7. 2 egg yolks
  8. 1 tablespoon butter
  9. 1 pound farmers cheese mashed
  10. 1/4 teaspoon salt
  11. 1 tablespoon granulated sugar.
  12. Cream yolks and butter then mix in cheese, salt and sugar.
  13. Put 1 teaspoon of filling on each dough circle being careful to place if off center.
  14. Moisten rim of the circle with water.
  15. Fold unfilled side of the circle over filling and press edges of crescent firmly to seal.
  16. Drop pierogi into boiling salted water and cook gently for 5 minutes.
  17. Remove with perforated spoon then serve with melted butter and sautéed onions.
