Roasted Pear Salad

- * 4 bosc pears, halved, cored, sliced in eighths shopping list
- * 8 shallots, peeled, halved shopping list
- * 3 tablespoons chilled butter, cut into small pieces shopping list
- * 6 tablespoons apple cider shopping list
- * 1/4 cup honey shopping list
- * 2 teaspoons fresh lemon juice shopping list
- * 1 large clove garlic, minced shopping list
- * 2 tablespoons raspberry vinegar shopping list
- * 1 tablespoon basil shopping list
- * 1/2 cup grapeseed oil shopping list
- * 1/2 teaspoon salt shopping list
- * 1/2 teaspoon freshly ground pepper shopping list
- * 1/4 cup port wine shopping list
- * 8 cups salad greens shopping list
- * 1/4 cup crumbled blue cheese shopping list
- * 1/4 cup toasted walnut pieces shopping list

How to make it
- Preheat oven to 400 F.
- Place pears and shallots in a 13 x 9-inch baking dish coated with cooking spray; dot with butter.
- Combine cider, honey and lemon juice in a small saucepan.
- Bring to a boil, and pour over the pear mixture.
- Cover and bake for 20 minutes.
- Uncover and bake an additional 30 minutes or until the pears are tender, basting occasionally.
- Remove from oven and transfer pears and shallots to bowl; set aside. Reserve pear liquid.
- Combine garlic, pear liquid, vinegar, basil, oil, salt, pepper and port in the workbowl of food processor.
- Process until blended.
- Arrange salad greens on 4 serving plates.
- Divide pears and shallots over greens.
- Sprinkle with blue cheese and walnuts.
- Drizzle with port vinaigrette.
