Corn and Bacon Fritters

Tried and true. These are fantastic, we love them. They are good as a side dish or an appetizer. Waning, they are addicting. This recipe came from an estate sale. I obtained it when I purchased the family collection from the Glib Estate in Mesquite, Texas in 1982. Read more See less
Ingredients
- 1 cup sifted flour shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon salt shopping list
- 2 eggs well beaten shopping list
- 1/2 cup milk shopping list
- 1 tablespoon cooking oil shopping list
- 6 slices cooked bacon crumbled shopping list
- 2 cups whole kernel corn drained shopping list
How to make it
- Mix all ingredients in order listed.
- Drop 1 tablespoon fritter batter into deep hot fat and cook until golden brown.
- Shake off extra fat then drain on absorbent paper.
