Ingredients
  • 1 1/3 cups flour
  • 1/2 teaspoon freshly grated nutmeg
  • 1 1/2 teaspoon baking powder
  • 3 tablespoons sugar
  • 3/4 cup mashed or coarsely chopped bananas
  • 1/2 cup milk
  • 1 egg slightly beaten
  • 1 teaspoon vanilla
  • 1/2 cup sugar + 2 teaspoons cinnamon to roll fritters in

Directions
  1. Mix flour, baking powder, nutmeg and sugar,
  2. combine milk, egg and banana, add to flour mixture.
  3. let sit for 5 minutes
  4. heat oil to 375 degrees
  5. drop batter by tablespoonfulls into hot oil.
  6. fry on each side til golden brown and batter stops oozing from fritter.
  7. drain on paper towels
  8. roll in cinnamon sugar
  9. Enjoy!
  10. Recipe may be doubled
