Orange Glazed Pork Loaf Recipe

Ingredients
  • 1 pound ground ham
  • 1 pound ground port
  • 1/2 cup orange juice
  • 1 tbsp lemon juice
  • 1 1/2 cups soft bread crumbs
  • 1/4 cup chopped onion
  • 2 tbsp chopped parsley
  • 2 eggs, slightly beaten
  • 1/4 cup brown sugar
  • 1/2 tsp dry mustard
  • 1 tsp flour
  • 5 very thin unpeeled orange slices

Directions
  1. Combine orange and lemon juice and por over bread crumbs.
  2. Add ham, pork, onion, parsley and eggs. Mix thoroughly
  3. Mix together brown sugar, mustard and flour.
  4. Sprinkle sugar/flour mixture evenly in bottom of a greased 5 x 9 inch loaf pan.
  5. Overlap orange slices on top of the sugar mixture.
  6. Pack in meat mixture.
  7. Bake at 350 for 1 1/4 hours or until done.
