Savory Eye Of Round Roast Recipe
This is easy, delicious, tender, and can be sliced thinly for use as an appetizer with wheat crackers and horseradish spread.

Ingredients
  • good quality eye of round roast
  • rubbed sage
  • olive oil
  • pinch of rosemary
  • clove of garlic
  • pepper and salt to taste

Directions
  1. Oil an Iron Skillet with Olive Oil (leave about 2 tablespoons in bottom)
  2. Rub roast with Olive oil and place in skillet
  3. Rub roast with rubbed sage.
  4. Salt and pepper to taste.
  5. Mince the garlic and place on roast.
  6. add a little rosemary. (a fresh sprig works well)
  7. Sear all sides of roast using a med. high setting on your stove.
  8. Make sure you sear the ends. This should take only about 4 min. for all sides and no more.
  9. Bake in a preheated 350 degree oven.
  10. Bake 20 min per pound and no more. I sometimes bake it about 10 minutes less for a more rare meat.
  11. Remove and slice in thin slices. Place skillet with drippings on stove eye.
  12. Add about 1 cup of water and heat to high. Stir until sauce is rich and dark.
  13. Pour the sauce over the meat and serve
