Bean Soup Recipe
My mom's recipe for a great, thick soup. Best served with a loaf of french bread on a cold, winter day.

Ingredients
  • 2 lbs polish sausage
  • 1 tbls veg oil
  • 1 large onion
  • 2 cans great northern beans
  • 2 cans navy beans
  • 1 can kitchen cut green beans
  • 1 can Veg-All
  • 1 can stewed mexican tomatoes
  • 2 cans sliced potatoes

Directions
  1. Chop onions and slice sausage into cresent shapes
  2. Saute onions and add sausage. Cook until browned
  3. Drain all of the vegetables except for the beans(don't drain green beans either) and tomatoes
  4. Stir vegetables and beans together
  5. Cook over medium/low heat until hot approx 45 mins
  6. Enjoy!

Mmmmmmm... I make a similar soup to your Mom's and it's great on a cold day! The difference is I use Yukon Gold or Russet potatoes and add approximately 2-3 garlic cloves, minced. I like the fact that your Mom's recipe calls for canned potatoes though because it makes preparing the soup so much faster and easier! Cheers!!!
