How to make it

  • In a mixing bowl stir together first 4 ingredients.
  • Cut in butter till mixture resembles coarse crumbs.
  • Stir in currants.
  • Add the first beaten egg and milk; stir just till dough clings together.
  • Knead gently on a lightly floured surface (12 to 15 strokes)
  • Cut dough in half; shape each half into a ball.
  • Pat or roll to a 6 inch circle.
  • Cut each circle into 8 wedges.
  • Place wedges on an ungreased baking sheet so sides of wedges dont touch.
  • Brush with the slightly beaten egg.
  • Bake in oven for 10 minutes.
  • Serve warm with butter and jam.
