Chana Masala

- 2 T vegetable oil shopping list
- 1 medium onion, chopped shopping list
- 1 large clove of garlic, minced shopping list
- 1 T curry shopping list
- 1 T tomato paste shopping list
- 15 oz can of chick peas drained, reserving 3 T liquid shopping list
- 1/2 T lemon juice shopping list
- 1/2 t salt shopping list
- fresh black pepper shopping list
- crushed red pepper, optional to taste shopping list
- 1 T (vegan) margarine shopping list
How to make it
- Heat oil on medium high heat.
- Fry onions until slightly browned.
- Reduce heat to medium.
- Add garlic, curry, and paste.
- Stir and simmer about 2 minutes.
- Add chick peas, liquid, lemon juice, salt, and black pepper.
- Simmer 5-6 minutes, stirring occasionally.
- Add red pepper to taste.
- Add margarine, stirring through to melt it.
- Stir and simmer for 5 minutes more or until peas are softened and dish is hot.
- Serve over rice.
- OTHER: I cook green peas on the side and serve them on top. You can also use 3/4 cup coconut milk instead of lemon juice, but i don't. This dish really relies on the curry powder, so get a good one if you don't already have.
