Creamy Asparagus Tortellini Recipe
Easy to make. You can vary the veggie. I like my asparagus tender crisp not cooked all the way through

Ingredients
  • 2 packages (9 oz) each cheese tortellini
  • 2 cups spagetti sauce (whatever flavor you like)
  • 1 cup heavy cream
  • 2 tbsp flour
  • 1/2 cup cold water
  • 1/2 pound asparagus
  • 2 tsp thyme
  • 2 tbsp olive oil
  • 1/2 cup Parmesan cheese (or use a shredded variety - cheddar)
  • 1 tbsp parsley
  • 1/4 tsp pepper
  • 1 tbsp olive oil

Directions
  1. Cook tortellini according to directions.
  2. While this is cooking break off ends of asparagus. Cut into bite sized pieces. In a small skillet, place 1 tbsp of oil and cook asparagus until tender crisp....2 minutes.
  3. In a large saucepan, combine sauce and cream, heat over medium heat.
  4. Combine flour and water in measuring cup. Gradually add flour mixture to saucepan.
  5. Bring to a boil; cook and stir for 2 minutes or until thickened.
  6. Add the asparagus, thyme and olive oil. Reduce heat; simmer uncovered for 3-4 minutes or until heated through.
  7. Drain tortellini, toss with sauce.
  8. Sprinkle with cheese, pepper and parsley.
