Chili Cheese Jubilee Recipe
Another tried and true delight that is great as an appetizer or even for breakfast or brunch. The combination of cheeses, chilies, eggs and herbs makes this delightful. The addition of sour cream and creamy makes it very creamy.

Ingredients
  • 1 medium white onion chopped
  • 2 tablespoons butter
  • 8 ounce can tomato sauce
  • 1 package chili seasoning mix
  • 1/2 cup water
  • 2 eggs
  • 1 cup light cream
  • 6 ounces corn chips
  • 8 ounces Monterey jack cheese cubed
  • 1 cup dairy sour cream
  • 1/2 cup cheddar cheese grated

Directions
  1. Sauté onion in butter.
  2. Add tomato sauce, chili seasoning mix and water.
  3. Simmer uncovered for 5 minutes.
  4. Meanwhile beat eggs slightly then add cream mixing well.
  5. Remove tomato-chili mixture from heat then add egg cream mixture slowly stirring constantly.
  6. Place half the package of corn chips in the bottom of a 1-1/2-quart casserole then add half the Monterey Jack cheese and cover with half the sauce.
  7. Repeat layers once.
  8. Top with sour cream.
  9. Sprinkle with grated cheddar cheese.
  10. Bake uncovered in preheated 325 oven for 30 minutes.
