New Delhi Spiced Chicken

- 1 teaspoon ground turmeric shopping list
- 1 teaspoon curry powder shopping list
- 1 teaspoon coriander shopping list
- 1/2 teaspoon ground ginger shopping list
- 1/8 teaspoon chili powder shopping list
- 1 teaspoon black pepper shopping list
- 3 tablespoons butter shopping list
- 4 boneless skinless chicken breast halves cubed shopping list
- 2 white onions chopped fine shopping list
- 2 tomatoes chopped shopping list
- 2 green bell peppers chopped fine shopping list
- 1 celery stalk chopped fine shopping list
- 3 parsley sprigs minced shopping list
- 2 garlic cloves minced shopping list
- 1/3 cup seedless raisins shopping list
- 1 tablespoon dry sherry shopping list
- 1-1/2 teaspoon lemon juice shopping list
How to make it
- Heat two tablespoons butter in a large skillet.
- Place first six ingredients in skillet and brown for 1 minute over high heat.
- Place chicken in skillet with browned spices and stir to coat well then brown 1 minute longer or until chicken has turned white on the inside.
- Remove from pan and set aside.
- Add remaining butter to pan and sauté onions over high heat until limp.
- Add remaining ingredients including browned chicken and cook over medium heat until celery is tender but still slightly crisp.
- Serve over brown rice.
