Simple Potato Soup Recipe

A quick, simple "cheating" version of potato soup. Top with cheddar and bacon bits if you'd like.

Ingredients
- 2 medium sized potatoes (I prefer white potatoes)
- 1/2 cup whole milk
- 2 Tbsp. butter
- 1 Tbsp. dried parsley flakes
- Instant potato flakes
- Salt and pepper
Directions
- Peel and cube potatoes.
- Boil in plenty of water until soft.
- Add milk, butter, parsley, salt and pepper.
- Add enough potato flakes to get it JUST UNDER the consistency you want. (It will thicken a little).
- Simmer 10 minutes.
