Ingredients

How to make it

  • Cook pasta according to package directions
  • While past is cooking:
  • Beat the eggs in small mixing bowl
  • Add parmesan cheese and half and half
  • Mix well and set aside
  • Melt the butter in a large skillet
  • Add garlic and saute for 2-3 minutes
  • Brush mushrooms clean, and slice
  • Add to garlic and saute 3-5 minutes
  • Add cooked, drained spinach, prosciutto and pepper
  • Heat thoroghly and keep warm
  • Pour egg mixture into large pasta bowl
  • Drain and rinse pasta
  • Add to bowl
  • Toss together
  • The hot pasta will cook the egg mixture and adhere it to the pasta
  • Add spinach mixture and mix well
  • Broth can be added here if needed to adjust sauce texture
  • Sprinkle with Romano cheese and serve
  • Serves 2 for dinner, or 4 appetizer portions
