Vegetarian Chili Recipe
I'm not a vegetarian but I love this recipe, make it when I am in the mood for a meatless meal. Can't go wrong with these flavors. Yummers

Ingredients
  • 1 tablespoon olive oil
  • 1 medium white onion chopped
  • 4 cloves garlic minced
  • 1/2 pound mushrooms chopped
  • 2 cups cauliflower pieces
  • 1 large potato peeled and diced
  • 1 large green pepper seeded and chopped
  • 2 large carrots chopped
  • 3 cups corn kernels
  • 28 ounce can plum tomatoes chopped, including liquid
  • 30 ounces canned kidney beans
  • 2 stalks celery chopped
  • 1 cup tomato juice
  • 1 tablespoon cumin
  • 2 tablespoons chili powder
  • 1 teaspoon paprika
  • 1-1/2 teaspoons salt
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons tomato paste

Directions
  1. Heat olive oil in a large stew pot then add onion and garlic and sauté for 5 minutes.
  2. Add mushrooms and sauté another 10 minutes.
  3. Stir in cauliflower, potato, green pepper, carrots, corn, tomatoes, beans, tomato juice, celery all seasonings and tomato paste.
  4. Bring to boil then reduce heat and simmer.
  5. Cover and cook until vegetables are tender about 30 minutes.

This recipe has all the heartiness of a chili with meat, but don't skimp on the chili powder ... I added much more for that authentic chili flavor ... at least Texas-style!

I've always wondered how to make meatless chili! Thanks! Now if I could only get my dad to eat something without meat in it...


I made this exactly as written and we had it over brown basmati rice. We loved it! And two added bonuses are that it looks beautiful and my house smells heavenly!! Thanks for a great recipe!

Alterations


I substituted mushrooms for cubes of firm tofu since I don't like mushrooms, works well.

I also substituted kidney beans for I think black/pinto beans. I don't like kidney beans, but probably any kind of beans will work.

I also looooove chipotle so I added some chipotle powder to it. I'm not sure how much, but it was really really good.
