Vegetarian Chili

- 1 tablespoon olive oil shopping list
- 1 medium white onion chopped shopping list
- 4 cloves garlic minced shopping list
- 1/2 pound mushrooms chopped shopping list
- 2 cups cauliflower pieces shopping list
- 1 large potato peeled and diced shopping list
- 1 large green pepper seeded and chopped shopping list
- 2 large carrots chopped shopping list
- 3 cups corn kernels shopping list
- 28 ounce can plum tomatoes chopped, including liquid shopping list
- 30 ounces canned kidney beans shopping list
- 2 stalks celery chopped shopping list
- 1 cup tomato juice shopping list
- 1 tablespoon cumin shopping list
- 2 tablespoons chili powder shopping list
- 1 teaspoon paprika shopping list
- 1-1/2 teaspoons salt shopping list
- 1/8 teaspoon cayenne pepper shopping list
- 2 tablespoons tomato paste shopping list
How to make it
- Heat olive oil in a large stew pot then add onion and garlic and sauté for 5 minutes.
- Add mushrooms and sauté another 10 minutes.
- Stir in cauliflower, potato, green pepper, carrots, corn, tomatoes, beans, tomato juice, celery all seasonings and tomato paste.
- Bring to boil then reduce heat and simmer.
- Cover and cook until vegetables are tender about 30 minutes.
