Orange Rolls

- Rolls: shopping list
- 1 envelope active dry yeast (1/4 oz) shopping list
- 1 teaspoon sugar shopping list
- 1/4 cup warm water shopping list
- 1/2 cup butter, softened shopping list
- 1/2 cup sugar shopping list
- 1 teaspoon salt shopping list
- 2 large eggs, lightly beaten shopping list
- 1 cup milk shopping list
- 1 tablespoon fresh lemon juice shopping list
- 41/2 cups bread flour shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/4 to 1/2 cup bread flour shopping list
- honey topping: shopping list
- 1 1/3 cups powdered sugar shopping list
- 1/2 cup butter, melted shopping list
- 1/4 cup honey shopping list
- 2 egg whites shopping list
- Fresh orange glaze: shopping list
- 2 cups powdered sugar shopping list
- 2 tablespoons butter, softened shopping list
- 2 teaspoons grated orange rind shopping list
- 3 tablespoons fresh orange juice shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1 cup coarsely chopped pecan nuts (optional) shopping list
How to make it
- Rolls:
- Combine first 3 ingredients in a 1-cup glass measuring cup.
- Let stand for 5 minutes.
- Beat butter at medium speed until creamy.
- Gradually add 1/2 cup sugar and the salt.
- Beat until light and fluffy.
- Add eggs, milk and lemon juice.
- Beat until blended.
- Stir in the yeast mixture.
- Combine 41/2 cups bread flour and nutmeg.
- Gradually add to butter mixture, beating at low speed till blended.
- Turn dough out onto a floured surface with about 1/4 cup of bread flour.
- Knead for 5 minutes, adding additional bread flour as needed.
- Place dough in a lightly greased large bowl.
- Cover and let rise in a warm place until doubled in bulk (1 1/2 to 2 hours)
- Punch dough down.
- Turn out onto a lightly floured surface.
- Divide dough in half.
- Divide 1 dough half into 12 equal pieces.
- Rolling between hands into a 7- to 8 inch long rope.
- Wrap each rope into a coil, firmly pinching ind to seal.
- Place rolls in a lightly greased 10-inch round cake pan.
- Repeat procedure with other half of dough.
- Drizzle half of honey topping evenly over each pan of rolls.
- Let rise, uncovered in a warm place for 1 hour or double in bulk.
- Top evenly with peacans if desired.
- Bake at 350 degrees for 20 - 22 minutes until lightly browned.
- Cool rolls 2 mnutes in pans.
- Spoon half of fresh orange glaze over each pan of warm rolls.
- Serve immediately.
- Honey Topping:
- Stir everything together until smooth.
- Fresh Orange glaze:
- Beat powdered sugar and butter until blended.
- Add remaining ingredients.
- Beat until smooth.
