Tropical Ham Appetizer Bites Recipe
An easy make-ahead appetizer that you don't have to fuss with when your guests arrive. Cook time is really chill time.

Ingredients
  • 1/2 cup dried apricots
  • 1 cup pineapple juice
  • 1 tbsp. white wine vinegar
  • 1 tbsp. honey
  • Hot sauce (to your taste)
  • 1 1/2 cups flaked coconut (toasted)
  • 1/2 cup mayonnaise
  • 2 cups ground cooked ham
  • 1/4 cup finely chopped peanuts
  • 1 tsp. prepared mustard

Directions
  1. In a small saucepan, combine apricots, pineapple juice, vinegar, honey and hot sauce.
  2. Bring to a boil; reduce heat. Cover and simmer 15 minutes. Pour into a food processor or blender and process until pureed. Pour puree into a small bowl; set aside.
  3. Pour toasted coconut into a pie plate; set aside.
  4. In medium bowl, combine mayonnaise, ham, peanuts, and mustard. Shape into 1/2 to 3/4 inch balls
  5. Dip ball in apricot sauce and then roll in toasted coconut and arrange on platter or serving plate. Chill at least 2 hours to chill thoroughly; serve cold.
