Tropical Ham Appetizer Bites

- 1/2 cup dried apricots shopping list
- 1 cup pineapple juice shopping list
- 1 tbsp. white wine vinegar shopping list
- 1 tbsp. honey shopping list
- hot sauce (to your taste) shopping list
- 1 1/2 cups flaked coconut (toasted) shopping list
- 1/2 cup mayonnaise shopping list
- 2 cups ground cooked ham shopping list
- 1/4 cup finely chopped peanuts shopping list
- 1 tsp. prepared mustard shopping list
How to make it
- In a small saucepan, combine apricots, pineapple juice, vinegar, honey and hot sauce.
- Bring to a boil; reduce heat. Cover and simmer 15 minutes. Pour into a food processor or blender and process until pureed. Pour puree into a small bowl; set aside.
- Pour toasted coconut into a pie plate; set aside.
- In medium bowl, combine mayonnaise, ham, peanuts, and mustard. Shape into 1/2 to 3/4 inch balls
- Dip ball in apricot sauce and then roll in toasted coconut and arrange on platter or serving plate. Chill at least 2 hours to chill thoroughly; serve cold.
