Tortellini Soup Recipe

	italian soup main sausage pork zucchini pepper onion garlic herbs tomatoes tortellini pasta

Ingredients

1 pound Italian sausage with casing removed crumbled

3 large zucchini sliced

1 green pepper diced

1 white onion chopped

1 clove garlic minced

1/2 teaspoon oregano crushed

2 cans chicken broth

28 ounce can Italian plum tomatoes

6 ounce can tomato paste

8 ounce can tomato sauce

1-1/2 pounds fresh tortellini

Freshly grated parmesan

Directions

In large saucepan over medium high heat cook sausage, zucchini, pepper, onion, garlic and oregano until sausage is cooked.

Stir to separate meat.

Add remaining ingredients and bring to a boil.

Reduce heat then cover and simmer 15 minutes.

If necessary add a little water to cooking liquid.

Serve with freshly grated parmesan cheese.

I love Tortellini and Tortelacci which I make home made. I use veal in my Tortellini and Parmigiano and Romano and Asiago cheese. I am gonna try it with your receipe it sounds very good.
