Lime and Cinnamon Chicken Fajitas

- 12 (6 inch) warm corn tortillas shopping list
- 1 tbsp of cinnamon shopping list
- 4 chicken breast halves, boneless and skinless shopping list
- pepper and salt to your taste shopping list
- ¼ cup of canola oil shopping list
- 1 peeled and minced garlic clove shopping list
- 1 tbsp sliced jalapeno peppers shopping list
- 1 juiced lime shopping list
- 1 diced yellow onion shopping list
- 2 large peeled and cubed potatoes shopping list
How to make it
- Preheat oven to 400 degrees F or 200 degrees C
- Begin by placing the potatoes in a shallow baking dish.
- Then pour half of the oil on them, and sprinkle with salt.
- Place them in the oven for about 35 minutes or until tender.
- Meanwhile, begin seasoning chicken breasts with cinnamon, salt, and pepper.
- Then put them in a separate baking dish.
- Bake the chicken for approximately 30 minutes or until the juices have absorbed. Let the chicken cool and then shred.
- Next heat the remaining oil in a skillet over medium heat, and cook the onion and garlic until the onion is translucent.
- Then stir in shredded chicken, jalapeno, and lime juice.
- Cook until hot; then serve with potatoes and tortillas.
