Chinese New Year Egg Rolls

- 2 lbs. hot ground sausage shopping list
- 2 cups chopped celery shopping list
- 8 chopped green onions shopping list
- 1 1/2 pkg. Cole Slaw Mix, finely chopped shopping list
- 2 cups bean sprouts, chopped shopping list
- 2 tbsp. soy sauce shopping list
- 2 pkg Egg roll Wrappers shopping list
- Enough vegetable to fill bottom of large skillet. shopping list
How to make it
- Cook sausage until it looses its color.
- Add celery, onions, cole slaw mix, and bean sprouts to sausage.
- Sprinkle soy sauce over top.
- Saute for 2 minutes.
- Drain and cool.
- Put 2 tbsp. of meat mixture in the middle of each wrapper.
- Fold and seal with water.
- Heat vegetable oil in a large skillet.
- Drop the egg rolls into oil and fry until wrapper is golden brown.
- Serve with your choice of sauces.
- *If you are not frying right away, cover with a damp paper towel to keep from drying out.

This recipe is quick and easy! The coleslaw mix really does help speed up the prep time...We also chopped up the leftover chicken, beef and pork instead of the ground sausage...Great way to use up the leftovers!
