Ingredients
  • yellow cake mix (18 1/2 ounce)
  • 2/3 cup of orange juice (replace 2/3 cup of water in the cake mix)
  • cooled melted butter (replace oil in cake mix)
  • 3 cups shredded carrots
  • 1 cup chopped sliced toasted almonds
  • 2 t. cinnamon
  • =================================
  • 1 lb. sifted confectioners' sugar
  • 8 oz cream cheese
  • 1 stick of butter
  • 3 T. amaretto liqueur

Directions
  1. Prepare cake mix as directed on the box substituting 2/3 cup water with 2/3 cup orange juice and melted butter for the oil.
  2. Stir in shredded carrots and the cup of chopped sliced toasted almonds, and cinnamon.
  3. Bake in 2 8-in. round cake pans.
  4. For frosting, beat together sifted sugar, cream cheese, butter and amaretto liqueur.
