Beef Stew Casserole

- 11/2lbs 1" cubes beef chuck shopping list
- 1/4c. all purpose floue shopping list
- 11/2T. vegetable oil shopping list
- 2 cans(14 oz.) beef broth shopping list
- 1 lg. onio,sliced shopping list
- 1T minced garlic shopping list
- 3Lbs. small sweet potatoes shopping list
- 1lb. each carrots and parsnips shopping list
- 3 ribs celery shopping list
- 1T butter shopping list
- 1/4t salt shopping list
How to make it
- Position racks to divide oven in thirds. Preheat to 325
- Coat beef with flour. Heat oil in dutch oven over medium-high heat. Add beef and brown. Add broth,onion and garlic;bring to a boil. Cover tightly and place stew on one oven rack,potatoes on the other. Bake 30 mins
- Cut carrots,parsnips and celery into 1" lenths;stir into stew. Cover and bake 45 mins. or till tender when pierced.
- Peel potatoes and mash with butter and salt. .
- To serve:
- Heat oven to 400. Skim off fat from stew,then spoopn into a shallow 31/2Qt. baking dish;spread potatoes over the top. Bake 50 mins or until bubbly around edges and hot in center
