Tamale Meatloaf Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Blake Estate in Dallas, Texas in 1988.

Ingredients
  • 3 tablespoons chopped white onion
  • 2 tablespoons vegetable oil
  • 16 ounce can diced tomatoes
  • 1 cup yellow cornmeal
  • 1 pound browned ground beef
  • 3/4 cup whole kernel corn
  • 2 eggs well beaten
  • 2 tablespoons salt
  • 1/8 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder

Directions
  1. Preheat oven to 350.
  2. Grease loaf pan and set aside..
  3. In a skillet sauté onions in the oil until lightly browned..
  4. Add tomatoes and bring mixture to a boil..
  5. Add cornmeal gradually and cook stirring occasionally for 10 minutes..
  6. Remove from heat and add beef, corn, eggs, salt, pepper, paprika and chili powder..
  7. Mix thoroughly then pat mixture into prepared loaf pan and bake 55 minutes..
  8. Let set for 10 minutes before removing from pan.
