Herbed Veggies And Chicken Wings

- 5 whole chicken wings, split in half, with the ends cut off (keep skin on) shopping list
- 6-7 garlic cloves, not peeled, and scored down the middle\ shopping list
- 1/2 yellow onion, roughly chopped shopping list
- 2 carrots, sliced in 1" circles shopping list
- 1 stalk celery, chopped into 1" pieces shopping list
- olive oil shopping list
- assorted fresh or dry herbs (i used 1T each of mint, thyme and dill) shopping list
- salt and pepper shopping list
How to make it
- Pre-heat oven to 350 (F)
- Wash, chop/peel, etc. vegetables.
- In a pyrex dish, combine the chopped veggies and garlic.
- Scatter the wings in the same dish.
- Salt and pepper, and add the herbs.
- Drizzle about 3T. olive oil on top.
- With your (clean) hands, mix it all together, getting the oil and herbs to coat the chicken and veggies evenly.
- Pop in the oven in the middle tray and let roast between 1hour and 1hour,15 min.
- If you want the chicken to get more color, move to the top rack and put the broiler on for 5 minutes.
