Little mini cheesecakes. Kid's favorite. Great for get-togethers.

Ingredients
  • 18 vanilla wafers
  • 2 eggs
  • 1/2 cup sugar
  • 2 pkgs (8 oz) cream cheese
  • 2 tsp vanilla
  • 1 can (22 oz) pie filling any flavor..I like strawberry

Directions
  1. Place 18 paper cupcake liners in muffin tins.
  2. Put one wafer in each.
  3. Mix eggs, sugar, cream cheese, and vanilla together at medium speed for 5 minutes.
  4. Spoon into liners until 3/4 full.
  5. Bake 12 to 15 minutes at 375*
  6. Let cool, then spoon on pie filling.
