Mini Cheese Cakes

Little mini cheesecakes. Kid's favorite. Great for get-togethers.
Ingredients
- 18 vanilla wafers shopping list
- 2 eggs shopping list
- 1/2 cup sugar shopping list
- 2 pkgs (8 oz) cream cheese shopping list
- 2 tsp vanilla shopping list
- 1 can (22 oz) pie filling any flavor..I like strawberry shopping list
How to make it
- Place 18 paper cupcake liners in muffin tins.
- Put one wafer in each.
- Mix eggs, sugar, cream cheese, and vanilla together at medium speed for 5 minutes.
- Spoon into liners until 3/4 full.
- Bake 12 to 15 minutes at 375*
- Let cool, then spoon on pie filling.
