Triangle Caramel Freezer Cheesecake

- 125 ml butter (1/2 cup) shopping list
- 90 ml castor sugar (1/4 cup + 2 heaped tablespoons) shopping list
- 250 ml smooth cream cheese (1 cup) shopping list
- 10 ml caramel essence (2 teaspoons) shopping list
- 1 packet tennisbiscuits ( if you don' get this, any square, sweet biscuit) shopping list
- 125 ml caramel condenced milk (1/2 cup) optional shopping list
- 18 glaced cherries shopping list
- grated chocolate shopping list
- chocolate Covering: shopping list
- 150 ml sugar (1/2 cup +2 tablespoons) shopping list
- 125 ml water (1/2 cup) shopping list
- 200 g dark chocolate, chopped shopping list
- 62,5 ml cocoa powder (1/4 cup ) shopping list
- 125 g butter, cut into blocks (125 ml ; 1/2 cup) shopping list
How to make it
- Beat castor sugar and butter together.
- Add the egg, cheese and caramel condeced milk and essence.
- Cut a square of foil.
- Place 3 rows of 6 tennis biscuits each close together on the foil.
- Put the cream cheese mixture very carefully on top.
- Use everything.
- Place cherries or grated chocolate on the middle row of biscuits on top of the mixture.
- Take the long sides of the foil and carefully bring the ends together so that it can form a triangle.
- Tightly fold over the two edges on top of the triangle formed cake.
- Close the ends aswell.
- Place in freezer overnight.
- Chocolate covering:
- Heat up the sugar, water, chocolate and cocoa in a saucepan.
- Stir in the butter until everything is smooth.
- Place in freezer until it starts to thicken.
- Take the cake out of the freezer and open the foil.
- Carefully put the chocolate over.
- Place back in freezer until everything is frozen.
- Cover again with the foil.
- Freeze until you need it and cut into pieces.
- Can be frozen for up to 3 months.
