Coconut chicken

- 2 chicken breasts, cut into inch cubes shopping list
- 225ml (1 cup) coconut milk shopping list
- 2 teaspoons soy sauce shopping list
- 0.5 teaspoon chilli powder (your favourite brand/stength) shopping list
- 0.5 teaspoon ground ginger shopping list
- 2 garlic cloves, crushed shopping list
- juice of 1 lime shopping list
- 1 teaspoon sugar shopping list
- 8 baby corn, split in half lenghways shopping list
- half a red pepper de-seeded and cut into strips shopping list
- 1 small onion, thinly sliced shopping list
- 1 tablespoon fresh coriander (cilantro), chopped shopping list
How to make it
- Begin by combining the coconut milk, soy sauce, chilli powder, ginger, garlic, lime and sugar in a bowl. Add the chicken cubes and leave to marinate for 2 hours.
- Heat a wok (or fying pan) to a hot heat, and stir fry the vegetables in some vegetable oil for just 3-4 minutes until they have taken on a bit of colour but maintain some crunch.
- Meanwhile, remove the chicken from the marinade, put the marinade into a saucepan and boil it over a medium heat for 5 minutes so that it will reduce and thicken slightly. Stir occasionally.
- Add the chicken cubes to the vegetables, reduce the heat slightly, and stir fry everything for 5 minutes. Keep it moving.
- Now add the reduced marinade. Bring to the boil and simmer for a final 3 minutes (check the chicken is cooked).
- Sprinkle over the coriander, and serve the dish with some sticky rice.
