Acapulco Omelet

- 8 eggs shopping list
- 1-1/2 cups large curd cottage cheese shopping list
- 1/2 cup monterey jack cheese grated shopping list
- 4-ounce can chopped green chilies, drained shopping list
- 4-ounce can sliced black olives shopping list
- 3 medium potatoes shopping list
- 1 onion chopped shopping list
- 2 tablespoons minced fresh parsley shopping list
- salt and pepper to taste shopping list
How to make it
- Beat eggs until blended.
- Stir in cheese, chilies and olives.
- Peel potatoes and shred coarsely.
- Add onions, eggs, salt, pepper and parsley.
- Pour into buttered baking dish.
- Bake uncovered for 35 minutes at 350.
- Cool for 10 minutes before cutting into squares.
