Acapulco Omelet Recipe
Not your ordinary omelet. This is very cheesy, very savory and very yummy.

Ingredients
  • 8 eggs
  • 1-1/2 cups large curd cottage cheese
  • 1/2 cup Monterey jack cheese grated
  • 4-ounce can chopped green chilies, drained
  • 4-ounce can sliced black olives
  • 3 medium potatoes
  • 1 onion chopped
  • 2 tablespoons minced fresh parsley
  • Salt and pepper to taste

Directions
  1. Beat eggs until blended.
  2. Stir in cheese, chilies and olives.
  3. Peel potatoes and shred coarsely.
  4. Add onions, eggs, salt, pepper and parsley.
  5. Pour into buttered baking dish.
  6. Bake uncovered for 35 minutes at 350.
  7. Cool for 10 minutes before cutting into squares.
