Stracciatella

- 8 cups chicken stock shopping list
- 1/2 c orzo pasta (or other small pasta) shopping list
- 1 pkg (300g) frozen chopped spinach, thawed and drained (I prefer to use fresh spinach-about 4 cups-washed with stems removed) shopping list
- 1 egg, slightly beaten shopping list
- Grated parmesan cheese for sprinkling shopping list
How to make it
- In large stockpot or saucepan, bring stock to a boil on high heat. Stir in orzo. Cook 10 minutes until tender but firm.
- Stir in spinach. Pour beaten egg into boiling soup, stirring constantly.
- Serve in bowls immediately, and sprinkle with parmesan cheese to taste.

I love this soup. Try the "raggedy soup" posted too. It's similar and was featured in the Vincent Price cookbook from ages and ages ago. It is easy and delicious and my kind of soup, heart warming. Thanks for the post, dear.
